Ingredients:

Hucksters’s Lemon Cheesecake
450g cream cheese
100g caster sugar
2 lemons (juice and zest)
Boiling water to make up to 300ml
300ml double cream half whipped

Base - 150g crushed biscuits such as digestives or ginger nuts. 40g melted butter.

Method:
Mix melted butter into crushed biscuits and once combined divide equally between 6 dishes.
Half whip the cream, keeping it fluid, soften the cream cheese and dissolve the sugar in the lemon juice, zest and boiling water.
Combine the cream cheese and lemon juice then add the cream. Mix well and spoon into dishes.
Decorate with the remaining whipped cream and garnish with a strawberry or grated chocolate, or whatever you fancy!
